Broccoli and Bacon Pasta

Ingredients

Serves 4 as a main

  • Salt and pepper
  • 2 cups of penne pasta
  • 4 cups of broccoli
  • ¼ cup olive oil
  • 2 teaspoons garlic flakes – finely chopped
  • 1 tablespoon of finely grated lemon zest
  • 2 tablespoons lemon juice
  • 6 pieces of bacon – finely chopped
  • Edam cheese, finely grated for serving

Instructions

In a large pot, cook the pasta. In the last 5 minutes, add broccoli and cook until bright green and tender.

Meanwhile, in a small bowl, whisk together oil, garlic, lemon zest and juice, 1/2 teaspoon salt and 1/4 teaspoon pepper.

At the same time, heat pasta sauce in a small pot.

Fry bacon and then toss all ingredients together in the pot well to combine.

Serve sprinkled with finely grated Edam cheese.
