Herb Chicken with Spinach and Tomatoes

Ready in 30 minutes, this chicken dish features good-for-you tomatoes and spinach. Serve over pasta or couscous.

Ingredients - Serves 4 as a main
  • 2 tablespoons oil
  • 500g chicken breasts
  • 1 medium brown onion, chopped
  • 1 can chopped tomatoes, undrained
  • 1/4 cup water
  • 1 bunch fresh basil leaves
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 100g baby spinach leaves
Optional
  • 1/2 teaspoon garlic power OR crushed fresh garlic 
  • 1/2 teaspoon Oregano leaves 
  • Serve over pasta or couscous

Instructions

1.Heat oil in large frying pan on medium-high heat. Add chicken; cook and stir 10 minutes or until browned. Add onion; cook and stir 5 minutes or until softened.

2. Stir in tomatoes, water and seasonings. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 3 minutes or until heated through.

3. Stir in spinach; cook 2 minutes or until spinach begins to wilt.
