Orange Chicken Salad with Feta


Serves 4 as a main

Ingredients

  • 500g boneless, skinless chicken breast
  • 2 bags of salad mix or mesclun mix
  • 4 mandarins
  • 1 cup of capsicum
  • 1 cup of chopped fresh tomatoes
  • 1/2 cup of thinly sliced carrots
  • 1/2 cup of tomato and basil feta
  • 1/4 cup of red onion
  • 5 tablespoons of freshly squeezed orange juice
  • 2 tablespoons of balsamic vinegar
  • A pinch of salt and pepper
  • 2 tablespoons of crushed almonds

Instructions

  1. Cut chicken into 2cm thick slices. 
  2. Cook chicken until golden brown. 

  3. Peel mandarins and break into segments
  4. Combine salad or mesclun mix, mandarin segments and next 5 ingredients (through onions) in a large bowl.

  5. Combine orange juice, balsamic vinegar, oil, salt, and black pepper; stir with a whisk.

  6. Pour juice mixture over salad mixture, tossing to coat.

  7. Crush or dice the almonds.
  8. Divide salad mixture among 4 plates; top with chicken and almonds.
