Polenta is used in traditional Italian slow cooked dishes, but with this quick-cook variety you can make your favourite recipes in just a few minutes. Super versatile, it can be cooked into a creamy thick consistency, or allowed to set and then sliced into chips.
TO COOK: Add 1 cup of polenta and a pinch of salt to 4 cups of boiling water, stirring continuously. Simmer for 5 minutes. Take off heat and fold in a knob of butter and grated parmesan cheese, if desired.
